Not sure.
By a process of elimination it's definitely not a daffodil, a rose or an iris so it must be...
I/m sure that Pauline, Tim F or Susan will know!

It certainly looks like a thistle of some sort, and I expect Craig will be right with artichoke (or cardoon -- I don't think you could tell them apart from these photos, and I don't think many people know the difference anyway). Just to broaden it a bit though, I'll go for spear thistle Cirsium vulgare.
