Courgettes coming out of our Ears!!

What do you do when you are sinking under a sea of courgettes and you've already made all the usual things courgette orientated??

Why not try Courgette Fritters!

We adapted a recipe from a book fellow-blogger, Jean, gave us. I say 'adapted' because we didn't have all the correct ingredients to follow the recipe exactly. In fact, we had very few of the proper ingredients!


Here's our version of Courgette and Feta Fritters..

Ingredients:

2 courgettes
100g Feta cheese
2 spring onions or shallots
2 tablespoons of chopped mint
2 tablespoons of chopped parsley
1 egg yolk
2 tablespoons of flour (I used rice flour)
Black pepper and salt to season
Oil for frying

What to do:


Grate the courgettes and sprinkle liberally with salt. Leave for 30 minutes to drain.
Squeeze out as much excess liquid as possible and place the grated courgette in a large bowl.
Finely chop the spring onions or shallots and add these to the courgettes.
Crumble the Feta cheese into the mixture along with the herbs, egg yolk, flour and seasoning. 
Mix well and, with floured hands, form the mixture into small 'cakes' or fritters.

Gently shallow fry the fritters in oil until golden and cooked through (about 10 minutes) and serve with salad.

They were absolutely delicious and by using rice flour (or corn flour) they were gluten free; always a bonus!
